Easy Strawberry Jam

  • 4 Cups granulated sugar
  • 2 Cups crushed strawberries
  • 1 box Sure-Jell fruit pectin
  • 3/4 Cup water
Stir sugar into strawberries. Set aside 20 min., stir occasionally. Stir together fruit pectin and water in small saucepan. Bring to boil on high heat. Boil and stir 1 min. Stir pectin mixture into fruit mix, constantly until sugar completely dissolved and not grainy, about 3 min. Pour into clean plastic containers (or jars) to within 1/2" of top. Cover. Let stand at room temp for 24 hours. Jam ready to use, freeze or refrigerate.

Mostaccioli Pizza Salad

  • 3 Tbsp white vinegar
  • 2 Tbsp water
  • 1 Tbsp olive oil
  • 3/4 tsp Italian seasoning
  • 1/4 tsp each of salt and pepper
  • 2 garlic cloves - crushed
Combine above ingredients in bowl, then add:
  • 2-3/4 cup cooked mostaccioli (or penne)
  • 1 cup sliced mushrooms
  • 3/4 cup halved cherry tomatoes
  • 1/2 cup diced or sliced green pepper
  • 1/2 cup sliced black olives
  • 1/2 pkg pepperoni
  • 1/2 cup shredded mozzerella cheese
Chill for a few hours prior to serving. Makes approx 5 servings.

German Pancakes

  • 6 eggs
  • 1 cup flour
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 1 cube butter
Melt butter in 11x13" pan in oven at 350 degrees. Put eggs into blender until bubbly. Add milk, flour, sugar, vanilla and salt. Blend until light and bubbly. Remove melted butter from oven and pour egg mixture into pan on top of butter. Bake at 400 degrees for 10-15 min. Cut into squares and serve with powdered sugar and lemon juice, honey butter, or syrup.

Candy Bar Brownies

  • 3/4 cup melted butter
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 Snickers bars (2.07 oz each), cut into 1/4 inch pieces
  • 3 plain (or with almonds) milk chocolate candy bars (1.55 oz each), coarsely chopped
In a bowl, combine butter, sugar, eggs and vanilla. Combine flour, cocoa, baking powder and salt; set aside 1/4 cup. Add remaining dry ingredients to the egg mixture; mix well. Toss Snickers pieces with reserved flour mixture; stir into batter. Transfer to a greased 13x9-inch x 2-inch baking pan. Sprinkle with milk chocolate candy bar pieces. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean (do not over bake). Cool on wire rack. Chill before cutting.

60 Minute Rolls


Dissolve in 1 Cup warm water:
  • 2 Tbsp yeast

  • 2 Tbsp sugar
In separate bowl, melt:
  • 4 Tbsp butter

  • 1 1/2 Cups milk

  • 1 tsp salt
Cool to lukewarm, then add yeast mixture and 5 or more cups flour to make a sticky dough. Put in a warm place for 15 min. Shape into desired form. Put melted butter on each and let rise in pan 15-20 min. (Can put in oven on lowest temp.) Bake about 10 min at 400 degrees.

Chocolate Chip Cookies


Cream:
  • 2 Cups butter
  • 2 Cups white sugar
  • 2 Cups brown sugar
Add:
  • 4 eggs
  • 2 tsp. vanilla
Mix:
  • 4 Cups flour
  • 5 Cups Oatmeal
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
Mix all ingredients together. Add 24 oz. chocolate chips.
Bake at 375 degrees on ungreased sheet for 10-12 min.
Yield: 100 cookies
